This years theme ‘Look before you cook – reading food labels’ is all about understanding and following food safety instructions on packaged food.
Food borne diseases are not a minor issue in Australia, it is estimated 4.67 million cases of food poisoning in Australia occur each year. This results in approximately 47, 900 hospitalisations a year and 38 deaths.
Food poisoning is caused by bacteria from foods, which may still look smell or taste normal but have been incorrectly stored, prepared and cooked.
This food bacteria can multiply very quickly in certain conditions, that is why it is important to follow manufacturer’s instructions found on food packaging.
NEPHU’s Population Health Senior Manager (and qualified Dietician), Mel Chisholm, shares essential tips for buying, preparing, and storing food safely.
Key food label instructions to follow

Make sure to have consumed food by the use by date, for long-life items which may not have a date as it is assumed you’ll have eaten it by then, check the can or packaging for swelling, dents or other damage.
Storage instructions
Make sure to follow the manufacturers storage instructions, this may include temperature such as ‘keep refrigerated ‘or ‘store in a cool dry place’ to avoid moisture impacting the food.
After opening
Some food will have specific timeframes or instructions once you have opened the packaging including ‘consume within’ timeframes.
Cooking instructions
Following the manufacturers cooking instructions is always recommended, this will vary depending on how you cook the food, including microwave, oven, air fryer etc.
